This dessert always reminds me of my childhood, because my mom and older sister used to make similar ones. Which desserts would take you back to your childhood?
Lamington Cake (Australian Cake)
🦘Ingredients🐨
🦘For the Vanilla Cake
4 eggs
3/4 cup granulated sugar
3/4 cup 1 tbsp flour
2 tbsp cornstarch
1 tsp vanilla extract
2 tbsp melted butter
🦘For the Chocolate Icing
1 cup Icing sugar
1/2 cup dutch process/ special dark cacao
1/4 cup melted butter
1/4 cup melted semi-sweet chocolate
1/2 cup hot water
For the Coating
2 cups desiccated coconut
🦘For the Assembly
Mascarpone cream
Raspberry marmalade
🦘Instructions🐨
Preheat the oven to 350F. Butter an 8x8 pan and line it with parchment paper.
In a small bowl, mix together the flour, cornstarch, and salt.
In a large bowl, using an electric mixer or stand mixer, whisk the eggs and sugar until foamy and almost white color for around 5-6 min.
Evenly sift the flour mixture over the egg mixture and using a wooden spoon gently fold the mixture until combined. Add vanilla and melted butter, and gently fold the mixture again until just everything is incorporated.
Pour the batter into the prepared pan and bake for 17-20 mins until lightly golden brown. (Don’t forget to make a toothpick test before removing it from the oven.)
Remove the cake from the oven and invert it onto a cooling rack and cool completely.
🦘Preparing the Chocolate Icing
In a medium bowl, add icing sugar and cacao powder and stir. Add melted butter, chocolate, and hot water and mix until smooth. Set aside.
Cut the cake into equal squares or rectangles as in the IG Reel.
Place coconut in a bowl.
Dip the cakes into the chocolate mixture and coat them with coconut. Repeat this process with the remaining cake pieces.
Place them on a plate and chill for 15-20 min. (If you want to serve without cream and marmalade, they are now ready to be served.)
Cut the Lamingtons horizontally in half. Spread marmalade and mascarpone cream to your liking. Top with another piece. Serve with tea or coffee.
