Japanese Croquettes made with potato and meat is one of my favorite go-to food when I am craving something fried or drinking beer. Very easy, simple, and cheap to make. Very customizable, I added cheese to mine because why not! Crispy on the outside and super soft on the inside, I ate them all with my family :)
Makes 5-6
Ingredients:
2 large russet potatoes
½ onion
½ lbs (225g) ground pork or beef
½ tbs soy sauce
salt & pepper
½ tsp chicken bouillon powder (optional)
1 tbs butter (optional)
frying oil (vegetable)
breading station: all purpose flour - beaten eggs - panko
Recipe:
1. Peel, chop, and boil potatoes until tender. Pour out the water and let potatoes sit in the hot pot until the rest of moisture dissolves.
2. Finely chop onion, then on an oiled medium heat pan, cook until soft. Then add in black pepper, salt, soy sauce, ground meat, and cook until meat is cooked and moisture in pan dissolves.
3. Mash the potatoes to preferred consistency (I like smooth) and mix with onion & meat mixture, salt (to taste), chicken bouillon, and butter cut up into small pieces.
4. Mold potatoes into 3 inch wide & 1 inch thick round shape, or any shape you want. (add cheese into middle in this step)
5. Breading Station: Coat with flour and remove excess - Coat with eggs and remove excess - Coat with Panko and remove excess
6. Heat up frying oil in a pot to 350°F or 175°C, and add in the croquettes
7. Fry for 2-3 minutes or until golden brown, then rest on a wire rack.
Tips:
When molding, make sure to compact it so there is no air inside.
The mixed mashed potato mixture should be seasoned to taste, the mixture itself should taste good!
Place molded croquettes into the fridge for 10-15 minutes to get rid of more moisture and avoid splattering when frying. (I usually skip doing this)
