Ramadan Pide is very popular in Turkey. We eat this fluffy pillow-like bread during Ramadan either for iftar/dinner or sahur (early breakfast) In any case it is a perfect company with its rich flavor.
Ingredients For Ramadan Pide: (2 medium-size and 1 small pide)
500ml. water at room temperature
about 660gr. or more preferably bread flour or all-purpose flour
1 1/2 tsp salt
20gr. fresh yeast or 1 tsp active dry yeast
1 egg for egg wash
nigella and sesame seeds for topping
wheat bran to spread under the pides and to the pan
clean kitchen towel
