MABON RECIPE | Veggie-filled Cornucopia | Celebrating the Autumn Equinox
Mabon, the festival of harvest of the fruits, is quickly approaching on the pagan wheel of the year (/Wiccan wheel of year) and with it another reason to celebrate the abundance and blessings that mother nature has granted us over the year. The autumnal equinox, also called Harvest home is a time to reap rewards of efforts that we have sown throughout the year, it also stresses the importance of being grateful and sharing our gifts to ensure blessings in the following year. In essence, it is a feast of thanksgiving and today I would love to share an amazing recipe with you (well, actually three) that with its symbolism fits this celebration like a glove. We will be making an autumnal vegetable-filled filled cornucopia with bacon, cheese, and apricot sauce! A wonderful centerpiece for your Mabon table or, also a great festive dish to prepare for Thanksgiving dinner. The great thing about it is that this recipe is basically vegan (well, except the sauce) so it can easily serve as a fancy main for your vegetarian and vegan friends. Of course, you can also fill the horn with other things, like fruits, cheese, nuts, meat stews, candy, flowers or make a sweet filling with cooked apples, raisins, and vanilla sauce.
By the way, if you don’t like baking much – there is a cheat version of this: you can just use store-bought frozen breadstick dough instead of making it from scratch. But here, at the witches’ cookery, we are a bit old school so let’s get our hands dirty!
Ingredients Cornucopia (makes enough for one big cornucopia, and a small one for your friendly neighbors)
x 2 cups warm water
x ¼ cup sugar
x 6 cups flour
x 14g dry active yeast
X 1/2 cup oil
x 1 egg (Vegan option: some coconut oil)
Ingredients Cheese & Apricot dip
x 100g diced bacon
x 1 small onion
x ½ cup apricot preserve
x 1/3 cup walnuts (/pecans/cashew nuts)
x 200g processed cheese
x 150 g soft cheese of choice
x 1/3 cup sour cream
x Some chili
x Smoked paprika powder
x Garlic powder
x Salt & pepper
Oven-roasted Autumn Veggies
x Veggies of the season
(bell pepper, potatoes, pumpkin, onions, carrots, mushrooms, etc.)
x Some oil or butter
x Spices & herbs
x A bit of fresh lemon juice
