Nick Beardshaw from The Coach in Marlow cooks roast quail, sea bream and banana custard dishes

Nick Beardshaw the head chef at Tom Kerridge’s new operation The Coach in Marlow, takes us through three dishes from the current menu. The first is a whole stuffed roast quail, this is followed by a Moroccan spiced sea bream with smoked aubergines and gold raisins. The dessert is banana custard with dates and honeycomb.
