Schezwan sauce/chutney recipe is nothing but chili garlic sauce. In India we call Schezwan sauce and it’s an fusion Indo-Chinese recipe. Ingredients include red peppers (dried red chilies) soaked in water besides loads of garlic and ginger, some onions, Schezwan peppers, soy sauce, white vinegar, sugar and little bit of ketchup.
Schezwan chutney
Ingredients quantity
Onion chopped 2no big
Ginger chopped 2tbsp
Green chilies chopped 6-8no.
Garlic chopped 2tbsp
Red chili paste 10-12no.
Oil ½ cup
Star anise 3no.
Celery chopped 1tbsp
Tomato ketchup ½ cup
Red chili sauce ¼ cup
Black pepper powder 1 ½ tbsp
Soy sauce 1tbsp
Vinegar 2tbsp
Red chili powder 1tbsp
Black salt 1tsp
Chaat masala 1tsp
Salt to taste
Spring onion greens for garnish
Method
1. Take a pan add oil, chopped garlic, chopped ginger, chopped green chilies, star anise and mix it properly .
