270g white flour
30g whole wheat flour
15g intense dark cocoa
240g water
70g sourdough starter
6g salt
Warm fermentation 8 hours at 74F
Cold fermentation 18 hours at 40F
Baked 500F with lid on for 15 min
450F without lid for 20min
