Ingredient Quantity
Warm water as required
Wheat Flour ½ cup
Sorghum Flour ½ cup
Ragi Flour ½ cup
Pearl Millet Flour ½ cup
Jaggery 1½ cup
Paras cow ghee 1 tbsp for fry 2 tbsp
Almond chopped 1 tbsp
Cashew nut chopped 1 tbsp
Raisins 1 tbsp
Dry Ginger powder ½ tsp
Fennel powder ½ tsp
Green cardamom powder ¼ tsp
Method:
1. Take water in a kadai on low flame till it becomes lukewarm.
2. Take a large mixing bowl. Add wheat flour, sorghum flour, ragi flour and pearl millet flour.
3. Now strain all flour in another bowl.
4. Add some warm water and knead soft dough. Keep it aside.
5. Cut jaggery into small pieces.
6. Heat ghee in a pan on medium flame. Add chopped almond, cashew nuts, raisins and mix well. Sauté for 1 min.
7. Remove in bowl and keep it aside.
8. In a chopping board add dry flour and spread it.
9. Now take a portion of the dough. Roll in your palms and flatten it on the rolling board.
10. Heat non stick pan on medium flame and Place the roti on the hot pan and cook with a little ghee, turning sides till both sides are well done.
11. Remove the roti in nuts bowl; add dry ginger powder, fennel powder, green cardamom powder, jaggery and ghee.
12. Crush and mix together with the help of hand.
13. Remove in serving bowl and serve.
