Chaupati Bhel Puri is a wonderful preparation of puffed rice tossed together with a lot of tangy chutneys, aromatic seasionings, crunchy veggies and flavourful garnishes. Here we replace puffed rice with cooked rice and made a legacy of Mumbai chaupati as veriant of Pulao. Let’s enjoy Chaupati Bhel Pulao.

Ingredients
For green chutney
1 cup Coriander chopped
½ cup Mint leaves
4-5 no Green chili
Water as required
½ no Lemon juice
1 tsp Black salt
For pulao
2 tbsp Oil
3 no Green chili chopped
1 no Onion chopped
½ cup Tamarind chutney
2 tsp Red chili powder
1 tsp Turmeric powder
2 tsp Garam masala
1½ tbsp Sugar
Salt to taste
1 no Tomato chopped
4 cup Parliament platinum basmati rice boiled
2 tbsp Green chutney
2 tbsp Coriander chopped
½ no Lemon juice
½ cup Mixed farsan
½ cup Gathiya
½ cup Sev
4-5 no Papdi

Sev for garnish
Fresh coriander for garnish

Method
For green chutney
1. Take a mixer jar add chopped coriander, mint leaves, green chili and some water grind a smooth paste.
2. Open the lid of the mixer and add lemon juice, black salt. Grind to a thick paste once again.
For pulao
1. Take kadai on high flame add oil, chopped green chili and chopped onion sauté for 2 minute.
2. Add tamarind chutney, red chili powder, turmeric powder, garam masala, sugar, salt to taste and chopped tomato sauté for a minute.
3. Now add boiled parliament platinum basmati rice, green chutney, coriander chopped and lemon juice mixed well.
4. Add mixed farsan, gathiya and Sev tossed well.
5. Turn off the flame and side out in a serving plate.
6. Now garnish with crushed papdi, gathiya, Sev, chopped fresh coriander and green chutney.
7. Enjoy hot and spicy.
