Spicy Chili Oil Noodles Recipe:
3 tablespoons neutral oil (I used avocado oil)
2 teaspoons chili flakes (I used a combo of red pepper flakes and gochugaru)
4 cloves garlic minced
1 tsp ginger, minced
1 tbsp soy sauce
1 teaspoon Chinese black vinegar
2 stalks green onions (green part only)
½ tsp kosher salt
1 serving wide Asian wheat noodles
2 small baby bok choy, cut in half
Cook noodles according to package directions.
Towards the end of cooking the noodles, blanch the bok choy for 30 seconds. Drain and rinse.
In a large serving bowl, add chili flakes, garlic, ginger, soy sauce, black vinegar, green onions, and salt. Heat the oil until it reaches 350 degrees. Pour over chili garlic mixture and let it sizzle. Add the hot noodles right on top and mix mix mix. Garnish with slivered green onions and a side of blanched bok choy. Enjoy!
Shrimp Noodle Stir Fry Recipe:
10-12 medium shrimp deveined and peeled
½ cup shitake mushrooms, sliced
½ cup cabbage, cut into 1-inch chunks
1 carrot, shredded
2 stalks green onion
3 cloves garlic, minced
2 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon mirin sake
1 tsp sugar
1 tsp sesame oil
½ tsp kosher salt
Ground black pepper powder
8 oz. long noodles of choice (dried udon, soba, spaghetti, anything works!)
In a large pot of boiling water, cook noodles according to the package’s directions.
Drain and rinse, set aside.
In a bowl, mix the soy sauce, oyster sauce, mirin, sugar, sesame oil, kosher salt, and black pepper. Mix well and set aside.
In a large wok, add a drizzle of oil and let it get hot. Add cabbage and carrot and stir fry for a quick minute until softened. Add mushrooms, garlic, green onions, and shrimp. Stir fry until the shrimp starts to turn pink. Add the noodles and pour in the soy sauce mixture. Mix everything together and serve. Top with cilantro or green onions. Enjoy!
Beef Chow Fun Recipe:
1/2 lb L size rice noodles
1/2 lb shaved beef (from trader joes)
2 teaspoons soy sauce
1 tablespoon oyster sauce
1 teaspoon cornstarch
2 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon thick soy sauce
1 teaspoon sugar
1/2 teaspoon black pepper powder
1 tablespoon water
a handful of bean sprouts
3 stalks green onions split between white and green
1 teaspoon ginger, minced
4 garlic cloves, minced
In a bowl, marinate the shaved beef or sliced sirloin with 2 teaspoons soy sauce, 1 tablespoon oyster sauce, and cornstarch. Marinate for 30 minutes.
In another bowl, mix remaining soy sauce, oyster sauce, thick soy sauce, sugar, black pepper powder, water and mix well. Set aside.
Prep the noodles if boiling from dried or cut from fresh. Drain and set aside if you’re cooking from dried.
In a smoking hot wok, add oil and let stir fry the meat for a few minutes just until it’s done. Let it sit for a minute until you touch it so it develops a nice crust. Remove from wok into a bowl and set aside.
Let the wok get hot again and add a little more oil. Add the white part of the green onions along with ginger and garlic and stir fry for a quick minute until fragrant. Add the noodles and stir fry with the sauce. Add a handful of bean sprouts, green onions and beef. Stir fry again for another minute and you’re done!
