BEST BBQ CHICKEN SANDWICH RECIPE
2 pounds boneless, skinless chicken breast
1.5 cups Primal Kitchen Classic BBQ Sauce
10-ounce bag of coleslaw mix or 10 ounces, of thinly sliced cabbage
1-2 cloves crushed garlic
1/2 cup Primal Kitchen Avocado Mayo
a handful of fresh chopped cilantro or parsley
salt and pepper to taste
CHICKEN
Place chicken in a single layer on the bottom of your slow cooker. Pour bbq sauce over the chicken, being sure that all of the chicken is coated with the sauce. Set your heat to high and cook for 3.5 hours (or on low for 6 hours).
Carefully remove the chicken breasts and shred them apart using two forks (this will be very easy to do).
Place the chicken back in the crockpot and keep warm until ready to eat. Serve with extra bbq sauce and enjoy!!
COLESLAW
Combine everything in a large bowl and mix well. Adjust seasonings.
ASSEMBLE
Place shredded chicken over top of your favorite whole-grain roll and top with coleslaw. Put on the top of the roll and enjoy!
