One Pan Chicken Fajitas | This is a great family recipe, perfect for getting the kids involved at dinner and building their own fajita at the table. The leftovers are also great for lunchboxes, ideal for back to school, with ingredients from @dunnesstores 🌮 #brandpartner Serves: 4 Time: 45 mins 35g Dunnes Stores Fajita Seasoning 3 peppers, deseeded and thinly sliced 2 red onions, sliced into wedges 4 chicken fillets, thinly sliced 4 tbsp sunflower oil 4 flour tortillas Optional extras, for serving: 200ml sour cream Hot sauce Handful coriander leaves 1 lime, cut into wedges Preheat the oven to 200˚C/180˚C fan/400°F/Gas Mark 6. Place the onions, peppers and chicken onto a large baking tray along with the fajita seasoning and three tablespoons of the oil, tossing until everything is evenly coated. Place in the preheated oven for 30-35 minutes until the chicken is cooked through and veggies are golden. Toss halfway through the cooking time to ensure even cooking. When the tray of chicken is almost cooked, warm the tortillas by placing a dry griddle pan over a high heat and brush the tortillas with the remaining tablespoon of oil. One at a time, toast for 30 seconds either side, then divide between serving plates. Serve the tray of chicken to the table alongside the warmed tortillas, and the extras for serving.
